This is one of my very favorite summer slow cooker recipes! (Actually, I love to make it any time of the year, but it is a lot of fun for summer gatherings, especially!) If you are a Cafe Rio fan, you need to try this copycat of their signature dish. I have modified it slightly, but we follow a copycat Cafe Rio sweet pulled pork recipe similar to this one.



2. Slow cooker barbecue ribs

OK, I admit that this one item on the list isn’t particularly cheap. But barbecued ribs is another one of our family favorites. We generally don’t buy them unless they’re on sale for a good price, but even when they are not on sale they are of course way cheaper to make from home (and so easy!) than to buy at a restaurant. So if you will save money by buying them and making them at home (if you would otherwise go out to eat), even when they are not on sale, that is definitely a worthwhile trade-off! 3. Slow cooker barbecue chicken

For another delicious summer slow cooker recipe that is lighter on your wallet, try this easy slow cooker barbecue chicken. This meal takes only 5 minutes to prep, and a few hours later you have the makings of a tasty meal in front of you. This particular recipe that I like calls for boneless skinless chicken breasts, barbecue sauce, Italian dressing, brown sugar, Worcestershire sauce, and salt. Orange chicken is another one of our family favorites, and this slow cooker recipe is easy and tasty.  It takes just 5 minutes to prepare! Now, that is a win in my book! Most of the ingredients are also ones that people generally keep on hand (and you can substitute or omit the ingredients you might not have on hand, like rice vinegar—we just use regular vinegar or apple cider vinegar. 5. Slow cooker shredded beef sandwiches

Shredded beef sandwiches are another awesome summer slow cooker recipe! Hands-on prep time is just 10 minutes, and then you can just set it and forget it. (You can omit the bay leaves if you don’t have them on hand; the other ingredients are all ingredients you likely will have on hand.)


6. Easy slow cooker lasagna

I love lasagna, and this easy slow cooker lasagna makes preparation a snap! For this recipe, you saute the onion and then brown the hamburger in the same skillet, and then add the garlic and saute it, as well. Then you put all of the ingredients in the slow cooker as directed. One thing I like about this recipe is that you do not have to boil the noodles and you do not have to use no-boil noodles, either.
